True Natural Goodness Vanilla Goji Berry Balls

Ingredients:
1 cup True cashew nuts
1 cup True desiccated coconut
1 – 2 tbsp True goji berries
1 lemon, juice and rind
1/3 cup maple syrup
1 tsp vanilla extract
Method:
1. In a food processor, blend the cashews, desiccated coconut, rind of the lemon and 1 tbsp of goji berries, until the mixture is the consistency of flour.
2. While the blender is on, add the maple syrup and the vanilla extract. Then add the lemon juice very gradually until the mixture has fully combined, but is not too wet or loose.
3. For extra texture, add the second tablespoon of goji berries and blend for a further minute.
4. Roll the mixture into little balls and place in the fridge to firm them up.
5. Enjoy!
Tip: If your mixture does become too wet, add one or two tablespoons of ground almonds to help bind it.
